  • Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes.
  • Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.
  • In a mixing bowl of a stand-in mixer, cream the butter and sugar on medium speed till they are light and fluffy.
  • Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.
  • Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil.
  • Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.
  • Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 35 minutes.
  • Once the cooking is done, wait for 15 minutes before releasing pressure.
  • Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.

I made this cake once and made the mistake of not saving it! I love this recipe because it’s stripped down, simple, and focuses on the flavor of the dates. Every other recipe I’ve seen for date cake adds in toffee, caramel, honey, walnuts, etc. They’re sickeningly sweet. This one however is perfect as-is.

  2. Hi Anu
My birthday coming up and I have been looking for a healthy date cake recipie so I can enjoy my birthday cake guiltfree 🙂 I came across your recipie and based on reviews I decided to go for it
I am avoiding white flour so can I replace the flour with combination of brown rice flour and oat flour?

    1. Hi Azi – I’ve no experience baking with brown rice flour or oat flour. Sorry I can’t be of help.

  3. Hello Dear,
I will try your recipe. Sounds so good… Exactly what I was looking for. I have 1 question. Why put baking soda into the date mixture? I would like to understand the reason. Thank you so much.
